From the original Pellegrino company, located in Varapodio in the province of Reggio Calabria and active in the olive oil sector since 1960, Grinolio was born in 2012, strongly desired by Stefano Pellegrino supported by his sister Giuseppina. Between 2019 and 2020, after sector studies, Grinolio evolved creating two lines of extra virgin olive oil: Cardona monocultivar Ottobratica and Alivara blend of Ottobratica and Sinopolese from centuries-old olive trees.
Grandfather Stefano begins his olive oil milling activity, installing the first single-press mill.
The first agricultural land purchased was Calipò, a large plot with approximately 1,200 centuries-old olive trees...
The mill was modernized with the installation of four "Supergiganti Officine meccaniche Toscane" presses and a double millstone.
The traditional millstone press was replaced by a continuous cycle plant.
Grandfather Stefano's company expanded with the purchase of two more plots of land, reaching an extension of approximately 27 hectares.
The olive oil mill of Stefano Pellegrino passed into the hands of his eldest son Paolo, who managed it until 2016.
Stefano Pellegrino, now in his eighties, decided to transfer the management of the agricultural company to his children Paolo, Antonio, Concetta and Pasquale.
Grandson Stefano, son of Pasquale, decided to carry on what his grandfather had built with so many sacrifices, thus the agricultural company Grinolio was born - From our trees to your table.
Giuseppina Pellegrino, Stefano's sister, encouraged by her boyfriend Giuseppe Fusto, decided to attend a professional course together with him, becoming an Olive Oil Sommelier on June 23, 2019.
After extensive sector studies, Giusy and Stefano decided to change their oil production methods, relying on tradition but focusing strongly on innovation. Two lines of extra virgin olive oil were thus born: Cardona and Alivara.
Cardona, the flagship of Grinolio's production, obtained a Silver Medal at the international EVO IOOC contest.
Our oils are characterized by their golden green color, obtained thanks to harvesting processes that take place when the fruit is still on the tree by mechanical shaking. The olives collected on the nets undergo cold pressing within 12 hours, at controlled temperatures.
Our production is characterized by a short supply chain as our tagline states: "From our trees to your table!"
The technique for tasting an oil combines visual, olfactory and gustatory perceptions.
